The Great Recipe Swap

It's Friday! It's also my 50th post, so I'm thinking something more unusual is in order for today.

I was thinking about maybe a recipe blog. I'm also up for new recipes and trying things out and I'd love to try some of your favorite recipes that you love to make.

I'll share one of my faves and if you want, post one of yours in the comments. If there's a story behind it, feel free to share that too.

I'm posting a recipe for Potato casserole. My mother makes this a lot and it's my all-time favorite dish. Sean loves it just as much as I do and often requests that I make it. (I knew I married the right man!)

Potato Casserole
2lb package frozen shredded hash browns
1 can cream of chicken soup
2 cups cheddar cheese, shredded
2 cups sour cream
1/2 cup margarine, melted
1/2 tsp salt.

Combine all ingredients in a very large bowl and then smooth the mixture into a 9x13 pan. Bake for 45 minutes at 350 degrees. Crush 2 cups cornflakes, smooth on top of the casserole, then bake for another 15 minutes.

I LOVE to cook. I have a good recipe for a homemade chicken pot pie that I can't keep in stock. It is literally gone as soon as I make it.

Not terribly healthy though. I need to make sure I get my hands on some more HEALTHY recipes, if you catch my drift. :)

Oh my gosh, I love cooking, this is a GREAT idea!

My "always requested" spinach lasagna:
Boil water, cook 2/3 of a box of lasagna noodles.
Roast garlic in the oven (about 4-5 cloves, depending on how much you like garlic, for me, this is not enough haha) at 350 for about 20 min or until fragrant and soft.
Mix a tub of ricotta, a handful of parmesan, a box of thawed/drained spinach, a 14oz can of chopped artichoke hearts (drained), and 1/2 c of sun dried tomatoes together. Add garlic, and a handful of Italian seasoning.

Layer sauce, noodles, cheese/veggies in a 9x13 pan. Top with mozzarella and parmesan. Bake off for about 45 minutes until golden and bubbly on top.


This converted by "I hate veggies!!!" husband into a sun-dried tomato and spinach addict. He begs for it, even preferring it over my normal italian sausage lasagna.

Sorry that the measurements aren't exactly precise. I only really measure when I bake :)

My dad just sent me the recipe for my favorite childhood meal, so I will share :)

2lb cut up chicken breasts
1 Box Rotini
Good sized bunch of fresh broccoli cut up.
Lemon juice
Paprika
Tarragon
Flour
Olive Oil
Salt & Pepper
1 cup water

Fill a big pot full of water and boil. Cook the Rotini just until it is done, don’t overcook. Drain the noodles and mix in about a tablespoon of Olive oil. (this is a good trick to keep the noodles from sticking)
Put 2 tablespoons of olive in the microwaveable dish and mix the chicken sprinkled with paprika. in a microwave cook for 3 minutes, or longer just so it no longer pink. Check it at 2 minutes and mix.
Add the broccoli to the chicken mixture and cook an additional 2 minutes.
In a small pan mix 4 tablespoons lemon juice, 1 tablespoon flour, 1 teaspoon tarragon, dash of salt and pepper and 1 cup of water. Mix it good so the flour is all dissolved. Pour the mixture over the chicken, broccoli and noodles and mix well. Microwave for 2 minutes and check to see if it is good and hot. If not cook an additional minute.

What a great idea! I've been wanting to do one of these for cookies on my blog. I hope you dont mind if I borrow the idea to do it for baked goods (I'll give you credit of course!).

As far as a good recipe we've been doing a lot of grilling lately. I mean its only 97 degrees here today. I found a recipe for turkey feta burgers and my husband LOVES them.

1 pound ground turkey
1/2 onion diced finely
2 cups chopped spinach
1 cup mushrooms cut finely
feta cheese (use the amount you like... we always use a lot HUGE feta fans here)
1/2 to 1 cup italian bread crumbs
splash of milk
garlic powder,salt and pepper to your liking

The amounts in this recipe can all be really easily adjusted for the amounts that you like. If you want more spinach or mushrooms then by all means add more or leave them out.

Sautee the onion, mushrooms and spinach just to soften up a bit. When they have cooled down mix together with everything else. Add a splash of milk to give some moisture and to help everything "stick". When you have formed them into patties lightly place them in a little bit of leftover breadcrumbs so that they have a little crunch to them.

Spray the grill well. Top with swiss cheese if you like.

I was never a turkey burger fan but these are a whole different kind. and VERY good.
