I'm currently on a weight-loss quest and have been trying out new recipes so I don't get stuck in a rut.
Last night I tried this lime cilantro shrimp salad. It was tasty, but I felt like it was missing something. I think next time I'd add another vegetable to it like white corn. Granted, I know corn is not a veggie that is really promoted in diets, but I think a few helpings of this salad with corn wouldn't be that big of a deal.
The other day I mentioned I had started using SparkPeople to keep track of my nutrition goals. At first I was pretty skeptical about how writing down what I ate would help with weight loss, but I have to say it's really helped. It keeps me honest and quite frankly I don't want to eat something crappy and then have to put it in the meal tracker, so I've been eating better. So far I've lost 5 lbs since I got back here to Italy. Now...before any of you start saying congrats, let me just say that between Sean coming back from training in September and me going home for the holidays I packed on almost ten pounds! So this five pounds is taking off weight that wasn't on me pre-September. I just hope I keep on losing this easily!
Anyone have any other good healthy recipes they'd care to share?

That is awesome! I know too well how easy it can be to add pounds when you do things like go to the states. I am still working on the extra I gained from last summer. I don't know too many "healthy" recipes but I do try to limit my portion size when I eat. It's hard sometimes though.

Don't diminish! When I gained weight again, all the eating right and working out took a lot longer than 2 weeks to take off 5lbs! My body likes to cling to weight. 5lbs is awesome!
I used spark people for a while, and the concept absolutely works. I ended up not using the account and carrying a small notebook with me. I was having problems logging on every time I ate. I even found where I could make improvemnts

Good job! I started a food journal through dailyburn, and it definitely makes me think twice about what I eat. My family has started on a low carb diet which is hard. I'm hoping to see results soon. Keep up the good work!
Just remember that for women the first few weeks you might lose a good portion of weight, and then after that it may be a bit harder. So don't give up! Also, good sleep and trying to stay stress free (how many r's in fat chance?) will help keep your weight loss going in the right direction. Oh, and PLEASE don't weight yourself daily. Pick one time a week BEFORE you workout to weigh yourself.

I've been modifying a bunch of recipes from CookingLight.com (the magazine's online database). They're already lightened up, but I make them better by omitting things like butter and using low fat cheese.
Great post, I love it when you get great feedback and tips from other bloggers. I think I'll have to give the site you're using a try and stop paying the monthly fee for WW.com.
I can't think of any healthy recipes I've made recently. One low-point breakfast I like is a banana with a Tbsp of creamy peanut butter. If I have that plus coffee w/creamer, it's a 4 pt breakfast and the it keeps me satisfied til lunch.
Wow, 5 pounds is great. That's still an accomplishment! I need to get back on the weightloss track myself!

I need to start eating better myself, but it's hard to do on an awfully small budget! I'm working on it though!
I use sparkpeople also and I love it. I can't seem to lose another pound to save my life. Boo :(
